 Sweet Potato Gnocchi

 

So I attempted this at the weekend and they weren’t to bad at all!  I used gluten free flour instead of normal plain flour and found I ended up having to use a little more than advised however next time I will stick to the recommended amount as it was noticeable I had used more than needed.  Although dry fried they were lush!!!

 

What you’ll need:

 

500g sweet potato

250g plain flour or gluten free flour (your preference)

1 egg

1 garlic clove (personal pref)

1 tablespoon of nutmeg (I wanted them a little sweet)

 

What to do:

 

1:  Roast sweet potato for around 30-45mins, allow to cool slightly and peel off the skin

2:  Mash sweet pot until very smooth consistency

3: Add the garlic, nutmeg and egg.  Or just egg if not using the other ingredients

4: Mix well and slowly sift in the flour until you have a smooth dough

 

Now this is where I needed some flour on my hands as the mixture was a little doughy

 

5: Take some of the mixture and roll into a sausage shape

6: Cut into roughly 3cm slices

7:  Mark with a fork or roll into gnocchi shapes if being fancy

 

 

When ready, cook in boiling water until they float to the top

 

This recipe made a lot so you will probably get to freeze some for another day.

 

If anyone has any alterations or adds something that makes them tastier, let me know and I will share.

 

Naughty Sauce

 

You will need:

 

100g Butter

100g Maple Syrup

2 tbsp Nutmeg & Cinnamon (or any other preferred spice)

Vanilla extract

 

What to do:

 

Melt all the above in a pan and then either pour over the boiled gnocchi or my fave is fry the gnocchi in the sauce until they go crips – YYUUUMMM!!!!!
